Organic, Social & Fair Trade Standard. The coconut oil we use in our biscuits does not come from a local source since coconuts don’t grow in Britain. The supplier we use however, founded the company in the wake of the 2004 Indian Ocean Tsunami as a new revenue source for the Sri Lankan economy and that makes us feel really good. There is good karma all over this oil! The reason why we decided to use coconut oil in our biscuits? For a lot of reasons actually. One is that it is a heat stable oil which means its wellness based properties do not degrade when heat from the baking process is introduced. This is different to other oils, like extra virgin olive oil which may have amazing health benefits at cooler temperatures but do not always stand up to cooking or baking heat. Additionally, virgin coconut oil is a Medium Chain Triglyceride (MCT) fat, with many unique health properties which distinguish virgin coconut oil from the saturated fats found in meat and vegetable oils. MCTs are known to help speed up the metabolic process and may lower the risk of both atherosclerosis and heart disease. Coconut oil can help boost energy, support weight loss, encourage healthy digestion, help to heal wounds and boost brain function. It is believed that the lauric acid content in coconut oil can also act as a natural flea repellent. We are so proud to use organic coconut oil, especially one that supports social & fair trade standards in our biscuits as it is such a wellness oriented ingredient.
